Pasta with Zucchini & Goat Cheese


Another day, another fast and delicious pasta recipe. I've had this recipe marked for a while, and I'm really glad I made it because nothing beats a pasta dish filled with great flavor and veggies. I'm also on this goat cheese kick which was another bonus to this recipe. If you've never had goat cheese, you must try it. It's so creamy. I will definitely keep this recipe for a great tasting, fast, healthy pasta dish!

1/2 c. olive oil
4 large garlic cloves, thinly sliced
3 small zucchini, trimmed and cut into matchsticks
Salt & freshly ground black pepper
1/4 lb. goat cheese
1 lb. fusilli or other pasta
1/4 c. fresh flat-leaf parsley, minced
1/3 c. fresh basil, slivered

Bring a large pot of water to a boil. In a large frying pan over medium-low heat, warm the oil. Add the garlic and saute until fragrant, about 2 minutes. Raise the heat to medium-high, add the zucchini, and saute until lightly browned, about 10 minutes. Remove from the heat, add 1 t. salt and the goat cheese, and toss to combine.
Meanwhile, add 2 T. salt and the pasta to the boiling water. Cook, stirring occasionally to prevent sticking, until al dente, according to the package directions. Drain, reserving about 1/2 c. of the cooking liquid. Add the pasta to the sauce along with all the herbs and a generous amount of pepper. Toss to combine. Add as much of the cooking water as needed to loosen the sauce and serve.

I couldn't agree more! I'm always searching for oriechette but can never find it where I live! :(

that looks grogeous sarah.and it's perfect timning - i have both goats cheese & courgette (british word for zucchini) in my fridge! thanks for sharing this with vegetables, beautiful vegetables.

I love anything done with goat cheese...even zucchini which is one of the very few veggies I don't like.
