
I know, I know, butternut squash is much more appropriate for the winter time. But sometimes, you just get a craving. Come on, you know the feeling... I saw this recipe in a cookbook I recently checked out of the library, Williams-Sonoma Main Dishes. It looked so appealing, and I'm constantly on the lookout for new pizza ideas, especially ones that will really jazz things up a bit. This seemed perfect. And it turns out, it was.... Just imagine warm, carmelized butternut squash with goat cheese that is so creamy and soft, the two just melt in your mouth. Have I convinced you yet? The red pepper flakes and thyme also add great flavor, I would not leave those ingredients out. To make the crust, click here for the recipe I always turn to for great homemade pizza dough. I use this each time I make pizza at home and it never fails, coming out of the oven perfectly after 15 minutes.
Toppings:
1 medium butternut squash, peeled, pulp removed, and cut into small cubes
3-4 oz. goat cheese (per pizza)
Pizza sauce, however much you choose
1-2 T. dried thyme
Olive oil for the crust
Crushed red pepper flakes
Salt & pepper
Following the directions, make the pizza dough (this will make enough for 2 pizzas).
Preheat your oven to 400(ish) degrees. Peel the squash with a vegetable peeler. Slice into rings and then cut into small cubes. Spread the cubes out on a large pan, drizzle with olive oil, and sprinkle with kosher salt and pepper. Roast for about 25 minutes, tossing once halfway through. Assemble pizzas. I prefer to brush olive oil around the crusts and sprinkle with salt, pepper, as well as some type of delicious herb, whatever I'm in the mood for. You'll also need to turn your oven up to 500 degrees, as that is the temperature that the dough will bake at.

Stigmatized by the seasons!!! Read the book Animal, Vegetable, Miricle. It;s about NOT using fossil fuels to feed us. Buying local, buying what is in season. It is a balance of life...in so many ways. And environmentally responsible. That kind of "whenever I want it" mentality is what is wrong with our world. That is where we went wrong. It's not your fault. You are ignorant. Read the book.
